Challenge #4

2 Fun things to do this weekend:  Make-out with your spouse or partner for 5 full minutes (burn calories, reconnect, enough said..) and make a healthy treat to share with your family.  Be sure to share your healthy treat ideas! (Feel free to share your make-out stories as well..I think) 

Here are some thoughts to get you started…fruit kabobs on the grill (try alternating peach slices and pineapple chunks), frozen smoothie-pops (find a recipe under “smoothies” here on our site then freeze in a popsicle maker), bake a batch of oatmeal chocolate chip cookies with flax and chickpeas (recipe below). 

Little changes WILL add up!

Oatmeal Chocolate Chip Cookies

1 c packed light or dark brown sugar

3/4 c Earth Balance soft butter spread (other brands should work but I’ve only ever used Earth Balance)

2 large egg whites

2 t vanilla extract

1  15oz can chickpeas (drained and rinsed)

2 c semi-sweet choc chips

2 c flour

1/2 c old-fashioned oats

2 T flax meal

1 t baking soda

1/4 t salt

Preheat oven to 350.  Prepare baking sheets by lining with parchment or spraying with non-stick spray.

Beat together sugar and Earth Balance, beat in egg whites and vanilla, then chickpeas and chocolate chips.  Add flour, oats, baking soda, flax and salt. Mix on low until dough forms.  Drop by tablespoonful on baking sheet about 2 inches apart.  Flatten slightly with a fork.  Bake until golden brown, 11-13 minutes.

Makes about 2 dozen cookies that will disappear very quickly:)
