Just finished that really yummy lunch! Thought I’d put the recipe on for anyone needing ideas. I started the day with a mango pineapple smoothie loaded with kale, flax meal, oatbran and almond milk. Today I added a 1/2 c of Zico Mango Coconut water. It adds such a great punch of flavor for just a few calories. (be sure to read labels on coconut water, no added sugars or additives is a must)
For lunch I had a veggie chickpea stir-fry that was super satisfying and delicious. Here’s how to prepare it…
Place a T of olive oil in a large saute pan over medium heat.
Add one chopped yellow onion and one chopped scallion, saute about 3 minutes
Add one can drained and rinsed garbanzo beans and about a half cup of organic vegetable broth, heat about 5 minutes
Add one head of chopped broccoli, one container baby bella mushrooms (any shrooms will work!), saute another few minutes until broccoli is bright green, still a bit crisp.
Lastly, add one head swiss chard torn into pieces. I used the rainbow variety but any will do. I like to place the leaves in a large bowl of cold water to be sure all the dirt is rinsed off. Add leaves to the pot and squeeze one half of a lemon over greens once they have begun to wilt. Sea salt and pepper to taste and serve.
This makes enough for 3-4 big servings. The Clean is a bit more challenging when you have one eating lunch at home and a partner going off to an office, but it is doable. I try to make at least 2 servings of every lunch so that there is something for my husband to take with him each morning.
Another berry smoothie for dinner tonight and lots of water again today. Still have a headache, just a little one. My body is definitely in sugar-detox but it was badly needed. It’s been about a week now of really cutting back on sugar, then yesterday and today with zero, and I’m not craving it at all like I was before..makes the headache worth it!
