Here is a quick and easy Corn and Black Bean Salad I made with our Turkey Tacos last night for dinner. The salad was even better today when I had it for lunch. Corn and Black Bean Salad is great as a side dish or a stand alone salad. I have also added brown rice and diced chicken to the Corn and Black Bean Salad for a light dinner or a dinner when you have to eat on the go.
*I have actually put this in a large red plastic cup ( you know the kind from college days keg parties) with a plastic fork and napkin and given it to the kids to eat in the car or at a sporting event. Just remember to bring a plastic grocery bag with you to collect the trash.
1/2 Bag of Frozen Corn – put it in a colander and rinse it with water to thaw it out
1 Can of Black Beans – drain and rinse
1 Each of Red and Green Peppers – chopped (eliminate or add another color such as yellow or orange if you like)
1/2 Red Onion – diced
A Small Bunch of Cilantro – chopped
1/2 of a Lime – or the whole thing according to your taste
Throw corn, beans, peppers, onion and cilantro in a bowl and squeeze the lime juice over it. Add just a splash of white wine vinegar and you’re good to go. If you don’t have the white wine vinegar, skip it, I’ve made it without the vinegar before and it is just as good. Enjoy!
