Bib Lettuce with Apples and Lentils

Monday Melissa and I took our 6 kids to the farmers market for some local seasonal produce and just for fun.  I bought a ton of apples and was getting pretty creative with my salad making and this one was pretty good.  I used the bib lettuce and apples I got from the farmers market and a package of lentils I had bought at Trader Joes.  They are in the refridge section next to the beets.  This was the first time I had used them. They are precooked and unseasoned, so they are very easy and quick to eat.   I tossed the chopped bib lettuce together with the lentils and sprinkled some walnuts on top.  For the dressing I used olive oil, apple cider vinegar, ginger and some indian spices to warm it up a bit.  The dressing was ok but after telling a girlfriend about it she had recommended adding some curry powder so I will try that next.  If you are not that creative with salad dressing, it is hard to go wrong with good old olive oil and lemon.
